Also during the entire 8 days, leavened (grains that ferment – wheat, rye, oats, barley and spelt) bread is not permitted to eat. Eating unleavened bread instead during this holiday, symbolizes the unrisen bread the Israelites ate during the eight days journey when they escaped from Egypt.
